| Abstract: | Modified Atmosphere Packaging (MAP) is commonly used to
maintain the quality and improve the shelf life of foodstuffs. Scientists at The
Swedish Institute for Food and Biotechnology investigated the sensory quality of
broccoli stored raw in different commercially available packaging solutions with
an aim to study the effect of cooking, after storing the fresh broccoli in
MAP. |
