Abstract: The viability of two strains of Bifidobacterium bifidum (NCDC 229/A and DSM 20456), during storage at refrigerated temperature, in flavoured set and stirred yoghurts prepared without or with whey protein concentrate (WPC), and the overall acceptability of these probiotic yoghurts for human consumption were assessed. Supplementation of either set or stirred probiotic yoghurts with 0.5 or 1.0% WPC followed by storage at 4°C improved the viability of B. bifidum strains. However, both the yoghurts supplemented with WPC, at 0.5% level, were acceptable up to four weeks of refrigerated storage
