The opportunities in food proc-essing in India have been identified and power of India in traditional foods has been specified with a view to capturing na-tional and global markets. For successful exploitation of the opportunities in food processing industries, it is essential to act in terms of intellectual property protection and a huge awareness that need to be brought about amongst the academia, indus-try and research organizations. This will have an exponential growth in the human resource development, establishment of food processing parks/corridors, development of entrepreneurship, strengthening of internal chain, quality of the processed products, timely delivery of the products, sustainable technology and convergence of technologies as well as emergence of products/processes by interfacing and networking globally and perhaps niche itself for Indians potential in the world market.
