Abstract: This study presents operating factors affecting yield of total phenol and ferric reducing antioxidant power (FRAP) value of extracts from lotus rhizome using orthogonal design experiment (L<sub>9</sub>(3<sup>4</sup>)) based on single factor experiments. Optimum extraction conditions on yield of total phenol and FRAP value, respectively, were found as follows: ratio of material to liquid, 1 g: 6 ml, 1 g: 8 ml; extraction temperature, 70<sup>o</sup>C, 50<sup>o</sup>C; extraction time, 2 h, 0.5 h; and ethanol concentration, 40%, 40%.
