Abstract: | Experiments and generalized mathematical models have been used to evaluate impact of heat and mass transfer mode on microwave drying of potato. Evolution of temperature, moisture content as well as overall drying kinetics have been discussed with various internal and external physical parameters. New computational method can be used as a tool for microwave drying of potato slabs more efficiently. |
