|Abstract:||Colours have always attracted living beings whether it is flower or food.Fancy colours like blue and green are rarely seen in food preparations and in beverages. Hence these colours are also now used to make fun products. Health conscious people demand both colours as well as medicinal value especially in case of beverages, where anthocyanins and carotenoids having bioactive properties are in demand.|
