Food- The functional properties of
plant proteins could be improved by blending with other vegetable proteins or milk proteins. Scientists at J National Research Center for Cashew in Puttur, Kerala studied the functional properties of defatted
cashew kernel flour and reported that
I. blending of cashew and soybean in the
ratio of 1:1 improved the water absorption and emulsification capacity of cashew. |
