Abstract: Phenols and polyphenols in wine, fruits and vegetables exhibit a wide range of biological activity.This effect is mainly attributed to their antioxidant properties that prevent free radical mediated cytotoxicity and lipid peroxidation and oxidation of low-density lipoproteins (LDL).
